I don't eat it very much but I learned from my stint slicing meat in an Italian Deli how Italians make it You use all beef bologna preferably Boars Head. You slice it thick around a 1/4 inch you clip the edges and fry it up hot and quick. Makes a great egg and bologna sammich. A touch of hollandaise sauce puts it over the top. If you use cheap bologna all bets go out the window. All I know is a good fried bologna sandwich is comfort food on a Sunday morning.
