Currently, all states have laws that govern the appointment of electors. Indeed, the electors will likely have been appointed by election day, or at least the nominees will have been named.
Though the constitution uses the phrase “Legislatures,” in fact this means that the electors are appointed pursuant to state law. That means an act of a state legislature has to be signed into law by the governor, or the governor’s veto would have to be overridden.
So, in order to jury rig the system for Trump, the state laws would need to be amended, which includes the governor’s signature. That isn’t going to happen in Pennsylvania, Wisconsin, Michigan, or North Carolina.
Now, might a state like Florida try shenanigans like this? Maybe. I wonder if there would be enough republican legislators to sign on to what in effect would be a revolution, overthrowing the government chosen by the people.

No - most of the states do not actually start counting the ballots until on the election day itself, and if you are overwhelmed by the numbers of mailed in ballots, it may take many days to do so. So October 5 or so when the voter offices open, I will take the trip to the county election office and cast my vote directly in that office. Our new state system will actually count my ballot as I enter the paper output into the counter right then and there, and the vote can just be read off the machine on election day.

Speaking just for Pennsylvania, it is because the Republican Legislature won’t agree to allow the ballots to be at least processed prior to election day. The governor’s proposal is that processing be permitted to begin three weeks before election day.
The Republicans’ counter proposal is three days before, but it is coupled with a prohibition on dropboxes.
The obvious reason for the Republican intransigence is that it fits right into Trump’s game plan to try to spin post election results reporting as somehow something nefarious and illegal.

when looking at potential purple states over the summer, sc was the only one i saw that didn't look like it would allow for expanded/universal mail in or no excuse early absentee. did that change recently or did i hear/remember that wrong?

Why Oh Why do democrats need 2,3,6,12 days after election day to "count" them?

Sounds pretty politburo to me.
And given the current vagaries of PO delivery as the USPS intentionally gets run into the ground by the current administration, there is some question as to whether the mail system will actually be allowed to deliver the mail in a truly timely manner.
As for me, I will not trust a mailed ballot, but SC allows this year for no excuse absentee voting. So October 5 or so when the voter offices open, I will take the trip to the county election office and cast my vote directly in that office. Our new state system will actually count my ballot as I enter the paper output into the counter right then and there, and the vote can just be read off the machine on election day.
