If a coach posts a roster, can we rely on that? In other words, can we assume any player not included on the roster posted by the coach is dropped, even in the absence of an expressly specified drop?

You could ask the coach if he dropped the player by DM? Either you will help a coach spot his mistake (in which we have always defaulted in giving the player back) or you'll know the player is available fro pick up

I 100% agree there were less risky choices. He could be an excellent d-middie for 4 years or end up not playing at all. I figure if he plays, he wants the offensive glory of breaking down a defense and putting up points. I can just picture him running through lazy arms checks after blowing by defenders.

Nope. Is there a precedent of a college two sport athlete that was also a good scorer on the lacrosse team within the last 20 years?
