Hayman’s Old Tom Gin & Dolin vermouth.
Silky smooth and delectable. Not pushing the limits on botanicals and making use of a great vermouth as one is supposed to do.

Roasted is better, but I prefer to steam beets for pure ease. Cut into cubes with tomatoes, cucumbers with a disc of goat cheese dressed with balsamic vinegar and OO.
